German Beef Roll-Ups image

These are simple to make and so popular with the game-watchers. They go well with a cold beer or a mug of root beer or ginger ale.

16 slice deli roast beef, medium thickness, sliced in half lengthwise
1/2 tsp salt
8 oz chive and onion cream cheese spread at room temperature
2/3 c horseradish
16 pretzel rods
16 slice cooked bacon, cut in half
8 dill pickles, quartered
3/4 c whole grain mustard

Steps:

  • 1. Lightly sprinkle the beef slices sprinkle with salt. Spread each slice with a generous teaspoon of cream cheese; then spread 1 teaspoon of horseradish on top. Break pretzel rods in half; lay one in the center of each slice of beef. Lay a piece of bacon on one side of the pretzel and a pickle on the other.
  • 2. Roll the beef around the filling. Serve the beef roll-ups with mustard for dipping.
