Light, fresh summer soup. Make sure everything you use is fresh, fresh, fresh, or it won't taste as refreshing as it should. The cool thing is that you can freeze this, so that when you need a little sunshine in the dead of winter, you'll have it waiting for you...

4 ripe tomatoes, peeled,seeded & chopped
1 red bell pepper, roasted,peeled & chopped
1 yellow bell pepper, roasted,peeled & chopped
1 orange bell pepper, roasted,peeled & chopped
1 large cucumber, peeled,seeded & chopped
4 green onions, chopped
1 small red onion, chopped
2 stalks celery, chopped
1 clove garlic, minced
3 tablespoons minced fresh cilantro
3 tablespoons minced fresh parsley
1 teaspoon extra virgin olive oil
2 teaspoons balsamic vinegar
1 cup vegetable broth
1/2 teaspoon celery salt (more if you think it needs it)
4 lime wedges

Steps:

  • Pulse everything in food processor to puree.
  • Serve with a wedge of lime squeezed into it.
