1 small onion, finely chopped
2 cloves garlic, crushed
1/4 teaspoon coarsely ground pepper, to taste
1 1/2 pounds beef tenderloin steaks
1 tablespoon white wine
2 tablespoons parsley, chopped
3 tablespoons pork rind, crushed
1/2 cup grated Cheddar cheese
2 tablespoons Dijon style mustard

Steps:

  • 1. Preheat oven to 375° F. 2. Melt half the butter in large frying pan. Fry onion and garlic over medium heat for 4 minutes until softened. Spoon into a bowl, set aside. 3. Remove beef onto a sheet of foil. 3. Mix remaining ingredients into onion mixture. Fill the beef pocket with stuffing. Wrap up in foil loosely. Place on a tray and bake in preheated oven for 30-35 minutes for medium doneness or as desired. 4. Stand for 10 minutes then cut into 8 slices. Serve with butter-tossed cooked potatoes, yellow squash and tossed mixed greens
