GARLIC-MARINATED SHRIMP WITH CHIMICHURRI SAUCE image

Number Of Ingredients 16

Garlic Marinated Shrimp:
2 pounds extra-large shrimp, peeled and deveined
4 garlic cloves, chopped
3 tablespoons extra-virgin olive oil
1/8 teaspoon dried crushed red pepper
Chimichurri Sauce:
1 1/2 cups packed fresh parsley leaves
1 cup packed fresh cilantro leaves
1/2 cup extra-virgin olive oil
3 tablespoons fresh oregano leaves
3 tablespoons lime juice
1 tablespoon red wine vinegar
2 garlic cloves
1 teaspoon salt
1 teaspoon ground cumin
1/4 teaspoon freshly ground pepper

Steps:

  • For the Shrimp: Combine shrimp and next 3 ingredients in a large bowl; cover and chill 1 hour. Arrange the marinated shrimp on a greased jelly-roll pan. Bake at 500° for 5 to 6 minutes or until pink. Serve with Chimichurri Sauce. For the Chimichurri Sauce: Combine all ingredients in a blender or food processor; process until smooth.
