Garden Dill Potato Salad image

This is a recipe, my mom and I came up with when we had an abundance of cucumbers in our garden. Once we added them, we just started to add the rest of our garden. It's truly a Garden Potato Salad. Number Of Ingredients 22

2 lb red potatoes
2 hard boiled eggs
1 celery stalk chopped
2 scallions, cleaned, chopped
1 small dill pickle
2 hefty broccoli florets, chopped
1 hefty cauliflower floret, chopped
1/2 cucumber, chopped
1/2 c plain greek yogurt
1/2 c mayo
1/2 c sour cream
2 large baby carrots, sliced
1 small tomato, chopped
1 tsp garlic salt
1 Tbsp fresh dill, chopped
1 Tbsp fresh parsley, chopped
1 tsp prepared horseradish
1 tsp cajun seasoning
1 Tbsp dijon mustard
fresh cracked pepper to taste
2 Tbsp heaping, feta cheese
1 small red pepper, chopped

Steps:

  • 1. PLACE IN BIG BOWL AS YOU GO!!!
  • 2. Red Potatoes, Cooked till tender, cooled, cut up into similar sized pieces
  • 3. Eggs, cooked, cooled and chopped up
  • 4. Add all the other ingredients, except the Tomatoes and the Cucumber. Add them last, after dressing has been stirred in.
  • 5. Enjoy!!!
