Number Of Ingredients 6

1/2 stick(s) butter
1 medium medium sized onion, skinned and finely chopped
4 - fillet steaks, (london broil works great)
- freshly ground black pepper and salt
1/4 cup(s) irish whiskey
3/4 cup(s) half and half or heavy cream

Steps:

  • Melt the butter in a large frying pan. Add the onion and saute gently for about 5 minutes, until just beginning to color. Remove onion w/ slotted spoon.
  • Rub the steaks well with pepper and put them in the pan. Fry quickly for about 2-7 minutes on each side (the time depends on whether you prefer steak rare, medium or well done).
  • Add some salt. Pour the whiskey over and ignite it. When the flames die down turn the steaks over and continue to cook for about 30 seconds.
  • Move the steaks to a warmed plate. Add the removed onion and cream into the pan & simmer the drippings in the pan until it reduces to a thicker cream sauce. Spoon sauce over the steaks and serve immediately.
