Fudgy Oatmeal Bars image

These are definately a favorite for me!

Number Of Ingredients 14

2 c brown sugar, packed
1 c unsalted butter, softened
1 tsp vanilla
2 eggs
2 1/2 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
3 c quick cooking (or regular) oats
2 Tbsp unsalted butter
14 oz sweetened condensed milk
12 oz semi-sweet chocolate chips
1 c toasted pecans, chopped (or nuts of your choice)
1 tsp vanilla
1/2 tsp salt

Steps:

  • 1. Heat oven to 350 degrees.
  • 2. Mix brown sugar, 1 cup butter, 1 teasoon vanilla, and the eggs.
  • 3. Stir in flour, baking soda and 1/2 teaspoon salt; stir in oats.
  • 4. Reserve 1/3 of the oat mixture.
  • 5. Press remaining oat mixture in a greased jelly roll pan, 15 1/2×10 1/2×1 inch.
  • 6. Heat 2 tablespoons butter, the milk and chocolate chips over low heat, stirring constantly, until chocolate is melted; remove from heat.
  • 7. Stir in nuts, 1 teaspoon vanilla and 1/2 teaspoon salt to chocolate mixture.
  • 8. Spread chocolate mixture over oat mixture in pan.
  • 9. Drop reserved oat mixture by rounded teaspoonfuls onto chocolate mixture.
  • 10. Bake unitl golden brown, 25 to 30 minutes. Cut bars into about 2×1 inch, while warm. 70 bars; 135 calories per bar. *If using self-rising flour, omit baking soda and 1/2 teaspoon salt.
