FRUIT SALAD WITH BLACKBERRY-BASIL VINAIGRETTE image

8 cups gourmet mixed salad greens
1 ½ cups sliced mango*
1 ½ cups pink grapefruit segments*
1 ½ cups sliced fresh strawberries
1 cup fresh blackberries
1 large avocado, sliced
5-oz seedless blackberry preserves
¼ cup red wine vinegar
6 fresh basil leaves
1 garlic clove, sliced
½ tsp each salt, freshly ground pepper
¾ cup vegetable oil

Steps:

  • Pulse preserves, red wine vinegar, basil, garlic, salt and pepper in a blender 2-3 times. With blender running, pour in vegetable oil and blend until well incorporated. Place salad greens and fruit in a large bowl and gently toss. Serve immediately, with vinaigrette.
