Fruit Coffee Cake image

This is so versatile. You can make it with any fruit you want. I have tried strawberry and blueberry so far and both are delicious!.

Number Of Ingredients 14

1 cup all purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1 egg
1/2 cup milk
2 tbsp melted butter
1 1/2 cup sliced strawberries or any other fruit
topping
1/2 cup packed brown sugar
6 tbsp flour
1/2 cup oatmeal
1/4 cup chopped pecans
6 tbsp cold butter

Steps:

  • 1. In a large bowl, mix the first seven ingredients. Pour into a greased 8 inch square pan. Top with a layer of fruit. In a stand mixer (or by hand) mix topping ingredients and crumble over the fruit. Bake at 375 degrees for 35 minutes.
