Frog Eye Salad image

This is a favorite addition to our holiday meals; I have made it so often that its "all in my head!" lol...hope u have as much fun with this as I do...

Number Of Ingredients 7

1 1/3 c acini de pepe, uncooked
1 1/4 c milk
1 can(s) mandarin oranges-whichever size preferred-drained
1 can(s) crushed pineapple-whichever size preferred(reserve 1/4c of the juice
1/4 c sugar
1sm box vanilla instant pudding
2 c cool whip

Steps:

  • 1. Boil Acini de Pepe in 6c water for 11 min or til tender; rinse in cold water; drain well.
  • 2. Drain fruit, remembering to reserve the 1/4c pineapple juice.
  • 3. Add pudding, milk, sugar and reserved juice to large mixing bowl, and mix on low/med speed for 2 minutes.
  • 4. Add well drained fruit to above mixture 1st, then, acini de pepe and cool whip, mixing carefully.
  • 5. Refrigerate overnight or up to 4 hours before serving.
