Frog Eye Salad image

Number Of Ingredients 13

1 cup mini noodles (DaVinci)
2 qt s. water
1 Tbsp veg. oil
1/2 cup sugar
1 Tbsp flour
1/2 tsp salt
1 cup pineapple juice from fruit
1 medium egg
1 Tbsp lemon juice
1 can pineapple-crushed, drained (save juice)
1 can mandarin oranges, drained
1 cup mini marshmallows
4 oz Cool Whip

Steps:

  • Boil noodles 10 minutes in water, salt, and vegetable oil. Drain, rinse twice then cool.
  • Combine sugar, flour, 1/2 tsp. salt, pineapple juice from fruit, and egg in medium saucepan. Cook over medium heat until thickened. Add lemon juice and cool. Combine with noodles and refrigerate overnight in airtight container.
  • Add pineapple, oranges, marshmallows and Cool Whip.
