FRIED TOFU WITH PEANUT SAUCE image

1 block tofu
Canola oil, for frying
Sauce:
3/4 cup coconut milk
1 tablespoon Thai chili paste (nam prik pao)
2-3 tablespoons peanut butter
2-3 tablespoons sugar
1 teaspoon fish sauce
1 teaspoon vinegar

Steps:

  • Cut the block of tofu into quarters vertically and horizontally so that you end up with 16 pieces. Lay them on a paper towel to soak up some of the liquid before frying. Heat a wok with about 1 inch of oil in it to medium-high. Once the oil is hot, carefully lower the tofu into it and let it fry for several minutes, turning occasionally. When the tofu is golden brown on all sides, take it out and lay on a paper towel to soak up excess oil. Sauce: Heat the coconut milk in a pan over medium heat. Add the chili paste and stir, then let the mixture simmer until oil rises to the top. Add the peanut butter, fish sauce, vinegar, and sugar and adjust all of these ingredients to your tastes. If it is too thick, add a little water. Serve the fried tofu and peanut sauce while both are still hot
