Steps:
- Mix 2 eggs and water and set aside. Heat 2 Tbl. oil in hot skillet, add the 3 green onions and stir fry 30 seconds. Add egg mixture and scramble. Stir in 3 cups cold cooked rice and gently separate grains. Add shrimp, ham or chicken plus 3 Tbl. soy sauce and cook, stirring until heated.
