Fresh Tomato Sauce - for Italian Meatloaf image

Number Of Ingredients 10

2 tablespoons Unsalted Butter
2 tablespoons Olive oil
2 cloves Garlic cloves, finely minced
1/2 cup Yellow onion; thinly sliced
4 heads Large, tomatoes, seeded and sliced (4 cups) or Canned Fire Roasted Tomatoes
2 teaspoons Dried oregano
3/4 teaspoon Ground nutmeg
1/2 teaspoon Freshly ground black pepper and sale to taste
3 tablespoons Freshly grated Parmesan cheese
3 tablespoons Chopped fresh Italian Parsley

Steps:

  • Heat the butter and oil in a heavy skillet over low heat. Add garlic and onion and saute gently for 5 minutes.
  • Add the tomatoes, oregano, nutmeg, and salt and pepper to taste and cook, stirring occasionally, for 5 minutes.
  • Stir in the Parmesan and parsley. Cook, stirring constantly for 1 minute. Serve immediately.
  • Makes 3 cups; enough to sauce 1 pound pasta, 4 appetizer portions.
