Fresh Peach Pie image

Number Of Ingredients 7

2 tablespoons brown sugar
4 packets artificial sweetener (equal to 8 teaspoons sugar)
1 tablespoon cornstarch
1/2 lemon (juice of 1/2 lemon)
1 1/2 cups Large Peaches fresh, peeled and mashed
3 cups sliced peaches, fresh, peeled and sliced
Whole Grain Pastry Shell (recipe follows)

Steps:

  • My mom, Dorothy Rosenberg, sent this lower-calorie recipe and it's great. I've provided the exchanges for the filling in case you want to use a diferent pastry recipe.1. Combine sugar, sweetener, and cornstarch in a medium saucepan with juice and mashed peaches. Bring to a boil, reduce hear, and simmer about 5 minutes, until mixture is thickened, stirring constantly. Set aside to cool.2. Place sliced peaches in pastry shell. Spoon cooled peach mixture over peaches and chill thoroughly.Food exchanges per serving of filling: 1½ FRUITTotal food exchanges per serving: 1 BREAD, 1½ FRUIT, 1 FAT
