FRESH CORN GRITS WITH SHRIMP image

Number Of Ingredients 8

6T butter
3 oz ham cut into strips
1/2 lg sweet onion, sliced
6 oz sugar snap peas
1 c fresh corn kernels, 2 ears
salt and pepper
1 lb cleaned large shrimp
1 c lager

Steps:

  • Saute in 4 T butter ham till browned about 5 min. Add onion, peas, and corn and season with salt and pepper. Cook till crisp about 5 min. Add shrimp and cook till curling about 3 min. Add lager and bring to boil, simmer stirring frequently till shrimp are cooked thru and liquid is reduced about 3 min. Swirl in 2 T butter. Whisk a little milk into grits so it is like polenta, heat till warm, and spoon into bowl, topping with shrimp saute to serve. Can serve with lemon wedges.
