2 can(s) 15 oz black beans, drained and rinsed
4 fresh tomatoes, seeded and diced
2 cucumbers, peeled, seeded and diced
4 jalapeno peppers, seeded and diced
1 medium red onion, diced
1 red pepper, seeded and diced
1/2 bunch fresh cilantro, chopped
2 ears fresh corn (optional), kernels removed from cob
salt and pepper to taste
1/4 c vegetable oil
1/2 c red wine vinegar

Steps:

  • 1. Drain and rinse beans thoroughly. Place in large bowl. Dice and add all ingredients into bowl. Season with salt and pepper to taste, add oil and vinegar. Mix well. Refrigerate and serve chilled with tortilla chips.
