Fresh and Light Cucumber Salsa image

This is such a fresh and light salsa. I made this one day when I needed some extra ingredients and decided to throw some cucumbers in. I now make this for every picnic or party I go to. It is requested. Wherever I am, I have to give the recipe to someone. I keep this in my fridge at all times and all my kids love it. A great way to get them to eat their veggies.

Number Of Ingredients 7

3 (10 ounce) cans diced tomatoes and green chilies, drained
3 cucumbers - peeled, seeded and chopped
2 roma (plum) tomatoes, chopped (or more to taste)
1 bunch fresh cilantro, chopped
ΒΌ cup chopped onion, or to taste
1 jalapeno pepper, seeded and minced, or to taste
kosher salt to taste

Steps:

  • Mix together diced tomatoes and green chiles, cucumbers, roma tomatoes, cilantro, onion, jalapeno pepper and kosher salt in a bowl. Serve immediately; for best flavor, chill for at least one hour.
