FRENCH CHICKEN CORDON BLEU image

8 chicken breast filets
8 slices Danish ham
8 slices Swiss cheese
3 TBS chopped parsley
1/4 tsp pepper
2 eggs, beaten
1 cup Italian bread crumbs
1/4 cup butter
1 10 ounce can cream of mushroom soup
1 cup sour cream

Steps:

  • Prepare Chicken Breasis Rinse chicken and pat dry. Pound 1/4 inch thick with mallet. Prepare Filling Top each filet with slice of ham and cheese; sprinkle with mixtures of parsley and pepper. Roll to enclose filling; secure with wooden picks. Dip in eggs; roll in bread crumbs. Brown in butter in heavy skillet. Place in 9x13 inch baking dish. Prepare Sauce Stir mixture of soup and sour cream into drippings in skillet. Pour over chicken. Bake at 350 degrees for 45 minutes.
