FREEZER VEGETABLE FRIED RICE image

Number Of Ingredients 11

2 tsp vegetable or canola oil
4 whole green onions, finely chopped
1 1/2 tsp fresh grated ginger
1/2 tsp minced garlic
1 medium carrot, peeled and diced
1/2 cup fresh or frozen green peas
6 cups steamed short-grain rice, cold
2 large eggs, beaten
1/4 cup soy sauce
1 tsp sesame oil
Optional 1 cup cooked, diced chicken

Steps:

  • Step 1 In a wok or large skillet over high heat, heat vegetable oil. Add green onions, ginger and garlic, and stir-fry for about 10 seconds. Add carrots and green peas, and stir-fry for another 20 seconds. Add steamed rice, and stir-fry for about 5 more minutes or until rice is heated. Step 2 Make a well in middle of rice. Add beaten eggs, and let sit for about 30 seconds or until eggs are just beginning to set. Stir to scramble, breaking eggs into chunks as you go, until eggs and rice are well combined. Step 3 In a small bowl, whisk together soy sauce and sesame oil. Pour soy sauce mixture over rice, and continue to stir-fry for 2 minutes or until everything is well mixed. Cool completely. Package and freeze. TO Serve: Microwave frozen, stirring every minute or so. Variation: Add 1 cup cooked, diced chicken after adding vegetables.
