Number Of Ingredients 14

2 cans black beans, drained and rinsed
2 cans red kidney beans, drained and rinsed
1 can white sweet corn
1 can large can diced tomatoes undrained
2 pieces medium onions, sauteed
1 piece 1 bell pepper, any color, sauteed
1 can medium salsa
1 package McCormicks fajita mix
48 ounces chicken broth
1 piece roasted deli chicken
1 piece avocado
1 bunch cilantro
1 package cheddar or pepper jack
1 package tortilla chips or strips

Steps:

  • Simmer first 9 ingredients for 20 min. Add chicken and simmer 5 minutes. Garnish with avocado, tortilla chips, cheese and cilantro. Freezes well. Good to make a few days ahead.
