- 1. Blend flours and baking soda (by hand) Add the eggs one at a time- mixing well. Add butter, brown sugar, honey. Mix throughly until the consistency of a cupcake batter. Add more apple juice (1 tablespoon at a time, if too thick
- 2. Pour batter into muffin tins (lined with paper cups) half full.
- 3. Bake @ 350 degrees for 20-25 minutes or until toothpick in center comes out clean. Let cool
