FIRECRACKER CHICKEN SALAD image

1 T chili
1 t each gr cumin, garlic
2 T lime juice
2 T cilantro
1.4 c o oil
1 1/2 lb boneless chick breasts
1 sweet onion cut in thick rounds
1 red papper, quartered
2 zucchine, halved
DRESSING
1/2 c mayo
1/4 c salsa
1 T lime juice
2 T cilantro
S&P
AVACADO
2 C TORTILLA CHIPS

Steps:

  • Combine chile, cumin, garlic, 2 T lime juice, Oil and 2 T cilantro. Brush on chicken, onion rounds, red pepper and zucchini. Marinate 1 hr. Combine salsa, lime juice and cilantro. Add S&P Grill chicken 6 min per side. Grill veg. about 4 min per side. Slice thinly Mix and toss with dressing
