Fiesta Corn image

This is how we grew up eating corn, if not on the cob. My mother called it Fried Corn.

Number Of Ingredients 5

2 can(s) yellow corn or an equal amount of fresh or frozen corn
2 tablespoon(s) butter
1 teaspoon(s) fresh minced garlic (or use dehydrated garlic)
1/4 to 1/2 teaspoon(s) salt
1-2 teaspoon(s) dried red pepper flakes

Steps:

  • Drain liquid from corn. Heat butter in a heavy skillet over medium heat until melted. Add corn, garlic, and salt. Cook until corn starts to brown slightly, stirring and scraping bottom of pan to prevent sticking and burning. Lower heat; stir in red pepper flakes and 2 tablespoons water or corn liquid. Cover and simmer 3 to 4 minutes.
