FETTUCCINE WITH CHICKEN AND BELL PEPPER CREAM SAUCE image

3/4 pound skinless boneless chicken breast or thighs
1 tablespoon butter
1 large green bell pepper, thinly sliced
1 large red bell pepper, thinly sliced
1 small red onion, thinly sliced
2 cloves garlic, minced
1/2 teaspoon dried crushed red peppers
1 1/2 cups whipped cream
1 cup chicken stock
3 tablespoons fresh basil, thinly sliced
1/4 cup parmesan cheese, finely grated
8 ounces fettucine

Steps:

  • 1.Sprinkle chicken with salt & peppers 2.Melt butter in heavy larger skillet over medium high heat, add chicken and cook until brown on both sides (about 5 minutes) 3.Transfer chicken to plate 4.Add bell peppers and onion to skillet and saute until crisp-tender (about 5 minutes) 5.Add minced garlic and crushed red peppers and saute an additional 4 minutes 6.Add whipping cream and chicken stock, simmer sauce until sauce thickens, (about 8 minutes) 7.Cut chicken into strips and add to sauce. Simmer until chicken is cooked through (about 2 minutes) 8.Add basil and 1/4 cup of parmesan cheese, stirring to incorporate. 9.Season with alt and pepper. 10. Add sauce and chicken to cooked fettuccine, and toss to coat.
