Steps:
- Stir together first 4 ingreds., and press into bottom and 1 1/2" up sides of a lightly greased 10" soringform pan. Beat cream cheese and 1/2 C sugar at medium speed with an electric mixer 3 minutes or until fluffy. Add eggs, 1 at a time, beating well after each addition. Add pineapple and next 4 ingredients, beating until blended. Pour mixture into crust. Bake at 325 for 1 hour to 1 hour and 15 minutes or til center is almost set. Cool on a wire rack. Spread Glaze over top of cheesecake, and cover and chill at least 8 hrs.Garnish with whipped cream and coconut. Glaze: Stir together cornstarch and 1 Tbsp. water until smooth. Combine cornstarch mixture, crushed pineapple. 1/4 C sugar, and lemon juice in a saucepan over medium heat;cook, stirring constantly, 5 min. or til mixture is thickened and bubbly. Remove from heat;let cool completely. Yield: 1 Cup
