FOR EACH 2 1/2 POUNDS OF CHICKEN:
3 whole black peppercorns
2 clove garlic, peeled
1 1/4 tsp whole dried oregano
2 1/2 tsp salt
1 1/2 tsp olive oil
1/2 tsp vinegar or lime juice

Steps:

  • 1. Crush peppercorns, garlic cloves, oregano and salt in a mortar and pestle. Mix in the olive oil and vinegar or lime juice until all is well combined. Rub chicken with the seasoning before cooking.
  • 2. Chicken can be roasted, grilled, or pan-fried with this seasoning. For a lovely Arroz con Pollo dish, cook chicken pieces seasoned with adobo in olive oil in a large skillet.
