Maybe the use of mayonnaise in this recipe seems strange, but I promise, it makes for a fluffy, delicious muffin! Make sure to use real, full-fat mayonnaise, not low-fat or Miracle Whip.

Steps:
- Preheat oven to 375F.
- Put peeled, mashed bananas in bowl with sugar and mix until creamed.
- Add mayonnaise, mix in until incorporated.
- Sift baking soda and flour together, add to wet mixture and mix until all ingredients are moistened.
- Fill greased muffin tins to the top, baking 15-20 minutes, or until a toothpick comes out clean.
