I fell in love with gyros over 3 decades ago while visiting my sister Pam in Richmond Va. I've made them before, but I think I've finally perfected an awsome blend of meats and spices to suite my palate. This is a winner and keeper. Steps:
- In a medium bowl, combine all the gyro meat ingredients. **Meanwhile, combine Cucumber Feta & Yogurt Sauce ingredients together in a small mixing bowl. Cover & refrigerate**
- Mix gyro meat ingredients with a mixer until all the seasoning are evenly distributed and the gyro meat mixture is pasty and slightly sticky.
- With oiled hands, form gyro meat mixture into a log and place on a oiled sheet pan. Cover and refrigerate for at least 2 hours.
- Bake in a 325 degree preheated oven for 45-50 minutes, until log is firm and cooked through.
- Slice gyro in strips, onions & tomatoes. Warm flat bread on grill pan or in microwave.
- Build you gyro: flat bread, sauce, lettuce, gyro slices, tomato, onions and top with more sauce. Wrap in aluminum foil and serve
