Fast-and-Fabulous Egg and Cottage Cheese Casserole image

5 eggs, beaten
16 ounces cottage cheese
1/2 pound Monterey Jack cheese, shredded
2 ounces diced green chilies
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 cup crumbled bacon - optional

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare an 8x8-inch (10x13-inch if doubling the recipe) baking dish with butter.
  • Mix eggs, cottage cheese, Monterey Jack cheese, green chiles, flour, (bacon,) and baking powder together in a large bowl; pour into prepared baking dish.
  • Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until a toothpick inserted into the center of the casserole comes out clean, about 30 minutes more.
