FARRO WITH ROASTED BUTTERNUT SQUASH AND WALNUTS image

Number Of Ingredients 9

1 c farro, sauted in olive oil and cooked in 1 1/2 c vegetable stock with dash of cayenne, cumin and salt
Olive and walnut oils
1/2 sweet onion, chopped
1 stack celery, diced
1 carrot, shredded
1/2 yellow pepper, diced
1/2 c Reisling
1 c roasted, chopped butternut squash
1/2 c red walnuts toated and chopped

Steps:

  • Cook farro seperately until al dente. In skillet saute vegetables in equal mix of olive and walnut oils, until softened, add wine and cook for another 10 min then add farro and squash. Cook until farro is done adding wine and water as needed. Add walnuts, salt to taste and serve.
