Steps:
- Cook potatoes, 3/4 c green pepper and onion in oil in a large skillet over medium-high heat. Stir constantly for 8 minutes or until tender. Combine potato mixture, beaten eggs, ham, 1 c tomato, salt and pepper in a large bowl. Pour mixture into a lightly greased 9x13 baking dish. Bake uncovered at 325 degrees for 40 minutes or until golden. Top with remaining 1/4 c green peppers and 1/4 c tomato. Sprinkle evenly with cheese. Bake 5 more minutes or until cheese melts.
