This bread is loved by all who's tried it, especially my kids. I've handed out so many copies of this recipe over the years. It certainly doesn't last long. I made 3 mini loaves and my son already has the first one demolished...LOL! He wouldn't wait until it cooled for me to frost, as you can see in the pictures. :) If you love the combo of peanut butter and banana's, you will love this bread. Steps:
- Preheat oven to 350 degree F. Spray a 9 x 5 loaf pan with non stick cooking spray. I use bakers joy. In a large bowl, beat the peanut butter with the brown sugar until light and fluffy or until sugar is well incorporated. In another bowl, sift the flour, soda and salt. Set aside.
- Once the sugar and peanut butter is creamed, beat in the banana, egg, sour cream and vanilla. Mix well. To this add the flour mixture and only beat until blended. Fold in the peanut butter chips.
- Spread into prepared loaf pan. Bake for 55 minutes to 1 hour, or until pick comes out clean. If it starts getting too brown, cover with foil and return to oven.
- In a small bowl, whisk all glaze ingredients until creamy. Add more sugar or milk to get desired consistency. Remove bread from oven and place on cooling rack for 5 minutes, then remove from pans. Once cool, glaze.
- Enjoy with a cup of coffee or a nice glass of ice cold milk.
