I don't get take out very often, but when I do, it's almost ALWAYS chinese. It's certainly my weak spot. The down side is, I don't actually know what is going into this delicious food. Sometimes I don't want to know :-). Okay so who knew it was this easy to recreate something that tastes like it came from a take out carton and certainly is healthier. I used vegetables that I had in my house already but you could mix it up with using snow peas, cabbage, beans, peppers and/or broccoli. I served this with my orange chicken.

Steps:
- In a bowl, whisk together soy sauce, brown sugar, garlic, ginger. Set aside.
- Rinse and separate noodles- drain and set aside.
- Heat oils in a large skillet over medium/high. Add onion and celery and cook about 2 minutes. Add corn and bean sprouts (or whatever additional veg you are using) Cook another 3-4 minutes.
- Add noodles and sauce mixture and continue to cook about 4-5 minutes until heated through. Be sure to toss well as it's cooking to make sure everything gets well coated.
