FAGIOLI ALLA FIORENTINA image

Yield 6-8 servings

Number Of Ingredients 6

1 lb. dried cannellini beans (or other white beans), soaked at least 4 hours or overnight
5 oz. prosciutto, cut into short, thick strips
1/4 cup extra-virgin olive oil
2 canned plum tomatoes, quartered
2 cloves garlic, crushed
1 sprig fresh sage

Steps:

  • Preheat oven to 375. Put drained beans in a deep dish casserole or dutch oven and add cold water to just cover. Add remaining ingredients. Season to taste with salt and pepper. Cover and bake until beans have absorbed all the liquid and are tender, about 2 hours.
