English Toffee image

I've been making this since 1970, very good, make it every year for the holidays and give it as gifts to a few loved ones.

Number Of Ingredients 7

1 pound(s) butter
4 cup(s) sugar
2 tablespoon(s) corn syrup, light
1/2 teaspoon(s) vanilla extract
1 1/2 cup(s) chopped walnuts
2 package(s) 12oz size - chocolate chip
6 tablespoon(s) water

Steps:

  • in a large pan with candy thermometer attached to the pan on medium heat melt butter, add sugar and stir to dissolve sugar well, add corn syrup and water, stand back as this will steam up don't burn your hand. I cook this until the candy reaches 290*F, I turn the heat up to about medium high, it all depends on what pan I use.when your candy reaches that 290*F take it off the stove and add vanilla and chopped nuts.
  • Pour onto a buttered cookie sheet, after about 5 minutes I sprinkle the chips over the hot candy, then with a spatula spread the chocolate over candy, I then take some very fine walnut meat and sprinkle over the chocolate, this makes it look really good "like Almond Roca" ENJOY
