Enchiladas De Reso image

1 lb ground beef
2 cups (1 lb. can) tomatoes
1 can (6 oz.) tomato paste
1 pkg chili seasoning mix
1/2 cup water
1/2 cup chopped onion
1 tsp salt
1/2 tsp pepper
2 cups (8 oz.) shredded Cracker Barrel Sharp Natural Cheddar Cheese, divided
12 tortillas

Steps:

  • Brown meat, stir in tomatoes, tomato paste, chili seasoning mix, water, onion, and seasonings. Simmer 10 minutes.
  • Place rounded tablespoons of meat sauce and cheese on each tortilla; roll up tightly. Place seams side down in a 12x8 inch baking dish; top with remaining sauce. Cover tightly with foil.
  • Bake at 375°F for 35 minutes. Sprinkle with remaining cheese.
