ENCHILADAS DE QUESO (CHEESE ENCHILADAS) image

Number Of Ingredients 7

8 oz. shredded cheese (cheddar, jack, queso fresco, etc.)
6 corn tortillas
1 small onion
1 can refried beans - optional
cooked chicken or beef to taste - optional
4 green onions, chopped
Salsa de Chile en Polvo (enchilada sauce) - see recipe

Steps:

  • Make enchilada sauce. Reserve 1/3 cheese for topping. Preheat oven to 350. Grease enchilada pan (9x13" baking dish). Layer beans, cheese, & onions (& meat, if using) in tortillas, roll, & line up in pan. (Or: tear tortillas into pieces and layer ingredients in pan without rolling, as you prefer.) Cover with sauce & sprinkle top with cheese. Bake at 350 for 15-20 minutes, until cheese is melted and enchiladas are hot. Garnish with green onions & serve.
