EMPRESS CHICKEN image

Number Of Ingredients 12

12 drummettes
2 leeks
5 dried mushrooms, softened in water
1 c. bamboo shoots
4 T. oil
4 slices ginger
4 T. shoyu
2 T. wine
2 c. stock
1 T. sugar
2 t. cornstarch
2 T. water

Steps:

  • Fry leeks and ginger in oil over high heat for a few minutes. Add drummettes and brown. Add mushrooms, bamboo shoots, shoyu, wine and stock. Cover and bring to a boil. Lower heat and simmer 20 minutes. Add sugar and continue cooking until chicken is tender. Thicken with cornstarch/water mixture.
