Empanada-Style Curried Chicken image

Quick and easy appetizer. Combine 2/3 cup sour cream and 1/3 cup chutney as a dipping sauce or use your favorite dipping sauce.

1/3 cup(s) raisins
1/3 cup(s) sour cream
1/4 cup(s) major greys mango chutney (or your choice)
1 1/4 teaspoon(s) curry powder (or more to taste)
5 ounce(s) chunk or shredded pre-cooked chicken
1 package(s) refrigerated pie crusts

Steps:

  • Preheat oven to 400 degrees.
  • Combine first 5 ingredients and mix well. Allow pie crusts to come to room temperature. Unfold each crust and press out fold lines. Cut 7 3 1/2 inch circles from each pie crust.
  • Place 1 tbsp. chicken mixture in the center of each circle and brush edges with water. Fold in half over the filling and press edges with a fork to seal.
  • Place pastry on an ungreased sheet pan (I use parchment paper) and bake approx. 18-25 minutes or until light golden brown. Do not over-bake. Serve warm with additional chutney or condiment of your choice.
