Emilie's Homemade German Kale Soup image

This soup recipe was handed down to me by my german grandmother, as well it was handed down to her by her grandmother, and now i like to shared it with you all, i really hope you injoyed this old time favorite of mine! i make this soup all year round as it real easy and just so good!

Number Of Ingredients 7

1lbs - bacon-cut up into small pieces
2 LG - yellow onion-peeled and diced
3 TO 4 bunch(es) green kale-washed and cut into med size
2 1/2 LBS - potato -peeled and cut in lg cubes
4 QUART - chicken broth
- salt and pepper to taste
- cooked rice

Steps:

  • ADD DICE BACON IN LARGE STOCK POT, COOKED UNTILL VERY CRISPY
  • ADD ONIONS AND COOKED TILL ONIONS IS A LITTLE SOFT
  • ADD UNCOOKED DICED POTATO'S AND THEN CHICKEN STOCK,ADD THE KALE. IT MAY LOOK LIKE ALOT OF KALE BUT IT WILL BOIL DOWN! ADD SALT AND PEPPER TO YOUR TASTE! ITS DONE WHEN POTATO IS COOKED!
  • I ALWAYS COOKED A SMALL POT OF RICE ON THE SIDE AND ADD 1/4 CUP TO MY BOWL OF SOUP FOR A MORE HEALTHY SOUP!
