When you're bored with regular macaroni & cheese, try this departure. Excellent change of pace! Also great for those meatless Fridays during Lent.

Steps:
- Cook macaroni according to directions. Drain and set aside.
- Meanwhile combine oil & flour in saucepan; heat.
- Add tomato sauce, onion, garlic, salt and pepper. Simmer 10 minutes.
- Add 2 cups cheese and stir.
- Pour into greased 1-1/2 qt. casserole along with drained macaroni; mix thoroughly. May sprinkle more cheese on top if desired. Bake uncovered in a preheated 350ยบ oven for 30 minutes.
