ELLEN'S PURPLE GREEN BEANS image

When I received purple beans instead of green ones I didn't know what to do with them until a JAP member told me that they were just like green beans and would turn green during cooking. So here is the result.

Number Of Ingredients 6

1 or 2 lb organic purple snap beans (or any type of green bean)
3 slice bacon, uncooked
1 small onion, chopped
1/2 tsp salt
1/4 tsp black pepper
1 tsp dried parsley flakes

Steps:

  • 1. Wash beans thoroughly and drain. Place in a large saucepan with enough water to cover the beans. Bring to a boil. Reduce heat to medium-low.
  • 2. Add bacon, onion, salt and pepper. Cover and simmer for 2 hours, making sure water covers beans and doesn't evaporate.
