This dish makes a great Lenten meal, very filling and nutritious. The Bisquick makes its own crust, like magic. Who can resist broccoli and cheese? Extra yummy!

Steps:
- Cook broccoli as directed on package; drain.
- Beat baking mix, milk, eggs, and salt with hand beater until smooth.
- Stir in broccoli and 1 cup of the cheese.
- Pour mixture into a 5-1/2-cup souffle dish or a 1-1/2-quart casserole that has been buttered.
- Bake, uncovered, at 325 degrees until knife inserted halfway between center and edge comes out clean--about 1 hour. Top with remaining 1/4 cup cheese and return to oven for 5 minutes, or until cheese is melted. Serve immediately.
- May substitute 2 (10 oz. ea.) packages frozen corn or frozen spinach for the broccoli.
