3 c. diced elk
flour for dredging
1 c. chopped celery
1 c. chopped green pepper
1 c. chopped onion
1 small can of mushrooms
1 small can black olives
1/3 c. cooking sherry
1/2 pint sour cream

Steps:

  • Dredge elk cubes in flour/s/p and brown on med. high heat. Set aside. Cook veggies until tender in oil/butter. Add elk, mushrooms and olives. When hot, add sherry and sour cream. Simmer and stir occasionally approx. 1 hour.
