Eggplant Dip

I couldn't remember which group I read from that someone was looking for an eggplant dip like hummus. So I just shared with all. This is a yummy dip. Eat it like you would hummus.

Number Of Ingredients 6

1 large eggplant
1/2 c tahini-sesame seed paste
2 Tbsp olive oil
1 clove garlic, minced
juice of 1 lemon
salt to taste

Steps:

  • 1. Cut 1" slits in eggplant. Bake at 450' until tender or steam.
  • 2. Split & scoop out the insides, scraping to get it all out. Mash it.
  • 3. Mix tahini, lemon juice, garlic & salt to taste.
  • 4. Add mashed eggplant to the mixture.
  • 5. OPTIONAL--This can all be done in a food processor if you have one.
  • 6. Place in a serving bowl & drizzle with olive oil.
  • 7. Garnish with parsley if desired.
