I couldn't remember which group I read from that someone was looking for an eggplant dip like hummus. So I just shared with all. This is a yummy dip. Eat it like you would hummus.

Steps:
- 1. Cut 1" slits in eggplant. Bake at 450' until tender or steam.
- 2. Split & scoop out the insides, scraping to get it all out. Mash it.
- 3. Mix tahini, lemon juice, garlic & salt to taste.
- 4. Add mashed eggplant to the mixture.
- 5. OPTIONAL--This can all be done in a food processor if you have one.
- 6. Place in a serving bowl & drizzle with olive oil.
- 7. Garnish with parsley if desired.
