EGGPLANT BRUSCHETTA image

Number Of Ingredients 3

layer 1- Sliced eggplant
layer 2- chopped roma tomatoes, crushed garlic, basil, and olive oil tossed in a bowl
layer 3- mozz cheese, parm cheese, feta cheese

Steps:

  • topped with “Blaze” balsamic glaze… any balsamic vinegar will do, or none at all.. it’s mainly for the pretty look. I cooked them out on the grill on a grill pan. First I cooked each side of the eggplant until it was slightly browned on medium-high with the lid closed. Then once I flipped them, I added layers 2 and 3. Didn’t take very long and was fairly easy. The result, a low carb, vegetarian meal without heating up my kitchen! During the winter you could also broil them in the oven. I prefer pretty much anything on the grill.
