EDNA'S CARROT CAKE image

Number Of Ingredients 18

2 cups flour
2 tea baking soda
2 Tbs cinnamon
1 Tbs ginger
1/2 tea salt
2 eggs
1/2 cup sugar
1/4 cup light mayonnaise
8 oz pineapple crushed, undrained
1 can tomato soup
4 pkg equal sweetener
2 cups shredded carrots
1 cup walnuts
3/4 cup raisins
16oz light cream cheese
1 1/2 cup powdered sugar
1 Tbs vanilla
1/4 cup sour cream

Steps:

  • preheat oven to 350 mix flour, soda and spices together. dissolve equal into sugar beat eggs and add sugar, mayo and soup. fold flour mixture into liquid and lightly beet. add pineapple, carrots, walnuts and raisins. bake in greased and floured pans for 35 minutes, then check for doneness. FROSTING: mix cream cheese, sour cream and enough powdered sugar till smooth consistency. add vanilla to taste. 295 calories per slice
