Easy Spinach Casserole image

1 small onion, chopped
1 clove garlic, minced
1 pkg (10 oz.) frozen chopped spinach
1 can 98 % fat free cream of mushroom soup
2 oz Kraft Light Velveeta Cheese, cut up into cubes
1/2 cup Kraft 100% Parmesan Cheese
Salt and pepper to taste
1/4 cup Kraft 2% Reduced Fat Shredded Cheddar Cheese for topping (Shredded Colby Jack and Part Skim Mozzarella Cheese are tasty alternatives)
Italian breadcrumbs for topping (optional)

Steps:

  • Saute onion and garlic until onion is transparent. In a separate pan, boil spinach until tender and drain excess liquid. Combine onion, garlic, spinach, soup, light Velveeta and parmesan cheese in sauce pan. Heat until cheese is melted thoroughly. Add salt and pepper if desired.
  • Transfer spinach mixture into casserole dish. Top with shredded cheese and breadcrumbs.
  • Bake at 350 degrees F for 20 minutes or until topping has browned.
